Using the custom label feature to change the name of an app can have unintended consequences so be careful. I recently installed the Paypal Business app and since it was read by Voiceover only as “Business” I thought I just use the custom label feature to rename it to “Paypal Business”. I did this and Voiceover now correctly said “Paypal Business”. Later I opened the CBC News app and Voiceover now announced the “Business” category as “Paypal Business”. Similarly bot the Bank of Montreal and CIBC Banking apps are both called simply “Banking”. I renamed them properly, but now there is one place when I am using my main banking app which is the Scotia Bank app, where it says “CIBC Banking” inside the Scotia app. It seems that custom labels are treated almost more like custom dictionary entries in a way and other occurances of the particular word are also announced differently. One would think that when you relabel an app icon that this would be tied uniquely to this icon only, but that apparently is not the case.

Without knowing the kind of information you consider too much, it is hard to say. You can change the VO name for the icon, but it doesn't change the name of the app. Have you checked your notification settings for Mail? That could be where the extra info is coming from.
