Both are easy, doing an encrypted backup in iTunes is still the most complete backup you can do. Keep in mind that upgrading will automatically enable two-factor authentication. Make sure you know your password to login to iTunes/iCloud, maybe before the update go to http://appleid.apple.com and login with your Apple Id email and password to make sure. You will have to go there afterwards and disable two-factor authentication if you don't want it and it has to be done within I think 2 weeks or something like that.
