I agree that this is a bit obscure, but if you tap on Add to Favorites, go to the person’s mobile number and if you listen to Voiceover you find it will say “Call, Mobile, Actions available”. Swipe down to “More Options” and double tap, then from that list select “Facetime”. It says “Facetime” and not “Facetime Audio”, but when I just did this and then checked it did add it as a Facetime Audio call to my Favorites because you are under “Call” so it assumes you want Facetime Audio.
