First, you have to buy the export package, $4.99.
Then, after each page, you would have to copy the text and paste it into a word 
processing app.
Then repeat for however many pages.
At this point it does not save documents that I have found.
But, the full Prizmo app, $9.99 can scan multiple pages then you can export the 
whole thing and let it process the pages when exporting.
But, it does take a few steps.
The advantage to both Prizmo apps, is they seem to do a better job with the 
basic layout of the page. Nothing fancy like tables, but keeping the paragraph 
breaks reasonably well.

is unclear which is why I'm exploring other apps for capturing text.
