I would second the recommendation to use a Bluetooth keyboard for major text editing. I really like an app called Ulysses. It uses a Markdown language and that lets you know precisely what your formatting commands will do. Also, you can divide long documents into sheets which can be grouped. That lets you change their order very easily. A pricy choice at around $30 Canadian when I bought it but it's been worth every penny for me. One of the best apps I've ever come across.
