Hello Simon,

When you are first setting up the watch, you can triple-click the digital crown 
to turn on VoiceOver. Once setup is done, you'll need to set up the 
accessibility shortcut to do this, as you do on an iPhone. You can also ask 
Siri to turn it on, or configure it in the Watch app on your phone. To do that, 
open the Watch app, then General, then Accessibility, then VoiceOver.

As for a list of gestures, you might want to download the Apple Watch user 
guide from the iBooks store and have a look at the VoiceOver section.
