According to the web, it is no longer possible to place iOS 11.x on iPHone
into permanent Field Test mode. Field Test mode is the state in which
iPhone needs to be, in order to display signal strength in numbers rather
than bars.
I submitted a feature request to Apple, regarding this but whether or not
they will restore this functionality is anyone's guess. If they do, I
suspect it will take years.
Just one more reason why, so far, I'm glad I have not yet updated to iOS 11.
