You don’t have to turn off 3D Touch unless you really never use it. If you get the dismiss shortcut menu you tap too hard, just to it more gently, especially the second tap where you hold should be just touching the screen, don’t press at all. Alternatively if you do tend to tap hard just to to 3D Touch in the Accessibility menu and adjust the sensitivity. Also, in iOS 11.1 which should be released to the public probably in the next couple of weeks the “Edit” option is back when you swipe up or down on an app so there is no longer the need to double tap and hold.
