RecUp which used to be Dropvox also can be set up to start recording upon opening the app. Another option might be to plug in a wired headset, but just a regular one, not the Apple Earpods because with those it would probably record via the microphone that's built into the headset. A regular headset would channel Voiceover to the headset but hopefully it would just record normally via the external microphone. one wit
