Thanks a lot, Sieghard. I plugged my headset in and out for several times, played a bit with the volume keys, and now the volume is fixed again.

If that doesn't help you could try a hard reset (hold down the Home Key and Power Button at the same time and count to 12 or so). This should reboot the phone, it may take some time to come back on, if it doesn't after about 2 minutes give the Power Button a single firm press to turn the phone back on and wait another 30 or 40 seconds (boot time depends on whether you have an iPhone 4S or a 4).
