If someone has already offered the solution I am sending here, I apologize in 
advance.

I too have been experiencing this moderately annoying occurrence.  It can 
easily be resolved by doing the following on your iDevice:

- open settings, go to 
<General><Accessibility><VoiceOver><Speech><Pronunciation>

- add “emoji” and direct it to be pronounced as “EMoejie”

I’ve played with various versions for substitution, I found that Cap-E, Cap-M, 
“o”, “e”, “j”, “i” and “e” seems to sound most acceptable - at least to my ears.
