If you tap "Undo" it means that you just restored whatever last email message you deleted to the Inbox. If you want to discard this message without "undoing" your last deletion flick to "Cancel" and double tap. If you don't care to have this option at all then turn it off in General > Settings > Accessibility. You can also just open settings and type "Shake" into the search box at the top and this option is the only one which shows up, double tap on it which takes you there and then double tap to turn it off. I do find it handy since I have turned off the prompt which asks me if I really want to delete an email so if I accidently delete one I just shake the phone and tap "Undo". It is a bit sensitive and I have had this pop up when I was in Mail and was walking and stepping down a curb or something like that, it's enough of a vibration/shake that it activates the feature.
