Great! I had gotten some helpful advice for fixing the issue on my desktop computer, and hadn't known whether they'd helped users of the phone app.

So, I just opened the Amazon to reorder a mop I'd purchased a while ago (yay for losing things in a huge cross-country move from California to Massachusetts) and I was pleasantly surprised to find that I could flick down by headings for more than just two or three times before needing to do a three-finger swipe up. It was back to its lovely behavior of before, i.e. letting me go down and down by heading with no scrolling of pages required. I went to the app store just to check that I was running the latest version, and I am. The app said open next to it, not update, so I know I'm running the latest version. I think Amazon must have broken something internally that didn't require an app update to put right again. Either way, this is great news!
