Each new chip generation is a bit faster than the previous one, also often has more RAM in those phones, etc. The 8 plus is going to have a noticeable increase in battery life and probably speed in downloading larger files. If you are happy with the 7, and it is giving you good battery life, there is no real need to change. I am probably in the minority, but I would use the phone until you find it is not performing well enough for your needs. You noticed that the iPhone X lasted exactly 1 year and now has been replaced.
