You enter a dash, other common symbols as well as numbers by tapping on the "More Numbers" button at the botton left of the keyboard. Here you have numbers 1 through 0 in the top row, the middle row starts with the dash on the very left where normally the letter A is, then comes the forward slash etc. and in the bottom row you have punctuation like period, comma, exclamation mark, question mark etc. If you need other symbols there is a "More Symbols" button where you normally have shift on the left side of the keyboard and just below it is now the "More Letters" button which switches back to letters.
