You have to play the station you want, stop it, go into Siri settings and you
will find a suggested shortcut for that station.
Then, you can record a phrase like play Joni Mitchell radio and from then on,
you can have Siri play your chosen station.

Subject: Pandora

I have an iPhone 7 with the current IOS. I have updated all of my apps for IOS
12. I know with 12 you can ask Pandora to play using SIRI, I can do this. My
question is how do you have Pandora play a certain station.
