That is not entirely true, you would have to find out if Apple still signs 12.0.1 and, if so, find the correct IPSW file for your phone, this is the 2 or more Gigabyte full installer and you can then use iTunes to restore it. It is not a process anybody should attempt, but as I said, a lot depends on whether apple still signs 12.0.1, if not then Michael is correct and you can't go back.
Anyhow, apart from you said about text replacements not working, what else seems to be the problem? I am part of the public beta and just received the first beta of iOS 12.1.1.
