You can even turn off to wake it by turning the digital crown up, turn this off and tap to wake and it will only wake up if you actually press the digital crown. However, with Watch OS 5, the watch will usually detect when you've started a workout if you forget to tell it ahead of time. It will make a guess as to the kind of workout you are doing, and you can accept that guess or pick the right kind.
