Last time we did this, we had the basic mac Mini and bought seperate monitor with speakers, so you choose your own. Apple-specific monitor, like all their things, are a lot dearer than buying quality generic. YOu can hook monitors and usb keyboards to the laptops too, so could have one of those so you can use it as desk or lap use.
