Thanks, Mark. I have 4 email accounts which go to my phone, one of which is an Exchange account for my work email. That account requires a PIN, so I am now being prompted to also create a PIN on my watch. I really don't want that account to be connected to my watch. I am still not seeing a way to disassociate that particular account with my watch.

You can, however, silence notifications on the watch for incoming mail.
