Have you gone to Settings > General > Keyboards and added the third party keyboard you want to use? You also have to allow full access to the keyboard which often has to be done in the Settings for the specific keyboard you are using, e.g. for GBoard it might be Settings > GBoard Once all that is done and you have more than one keyboard available the button to switch keyboard is located at the bottom left of the keyboard between More Numbers and the Dictate buttons
