The question is why would you want to lock your phone when you are on a call? If you hold your phone to your ear and try to lock it, do you remove it from your ear? If so that would explain why it goes to speaker, as soon as the proximity sensor near the earpiece senses it is not close to anything it switches to speakerphone. Anyways, it's perfectly OK to ignore your phone while you are on a call, chances are it may lock automatically after a while anyways.
