Hello Johnna. To set a male Australian voice as the default voice, you need to go into settings, general, accessibility, voiceover, speech. Once there, you can download any of the voices available and set one as the default voice. There are currently two male Australian voices. One is the male Siri voice for Australia and the other is named Lee. You may have to add English Australian to the language rotor but I don't think that'll be necessary. There are currently British, Irish, US, Australian, Indian and South African English voices.
