It could be a setting called Touch to Wake in the Accessibility/Interaction section. If so, then it sounds like a setting on the newer devices without a Home button. I had the same thing happen on my XR, where the phone turned on every time I touched the screen. I had to call Apple Accessibility about this, and they helped me find where to turn it off.
