According to different Apple documentation and a developer I was talking to, if you hold down the cmd key, apps should list there shortcuts. I don’t know if the listing of the keys is specific to the iPad or if it also works on the phone. I couldn’t get any keys in apps I know support them to show on my phone, independent of VoiceOver.
