Anthony, you really do need to make your subject match what you are asking. But, under VoiceOver speech settings, the voice you select under Voice is the default voice. You can then add other voices on the rotor.
Updating over Wifi is fine if you have enough room on your device, though some people prefer to have the phone plugged into the computer and update through iTunes. Both work fine.
