Yes, you can disable it in Accessibility > Touch. This is another example where, as often before, I recommend to remember that the iOS Settings app has a search feature right at the very top. If you type "shake" into that search box you find one single setting, Shake to undo", it furthermore tells you where that setting is located, but all you have to do is double tap on it and it takes you straight there.
