Well, for those who are experiencing this, have you tried going into VoiceOver settings, Speech, pronunciation and put in yesterday with the substitution as yester space day to see if it solves the issue, though it may have a bit of a pause in the middle. And, of course, everyone should write Apple, but given how inconsistent it is, I wouldn't hold my breath.
