You can copy and paste the link into either the title field, or location field in your calendar, and you should be able to double tap on it to join the meeting. You can go into your Password and Accounts setting and turn on calendar for your gmail account, then in the calendar settings, make sure both are selected, but be aware you can only have one default calendar which is where new appointments will go. Whether they can then also sync across, I'm not sure. That is a perfect question for either Apple accessibility, or Google Accessibility by way of Be My Eyes. I know nothing about the echo or Google Mini devices, so hopefully someone else will.
