Hi Amy, This is puzzling. You may have already tried this, but with your husband standing by have you turned the phone off and back on? I was going to suggest turning off Voiceover and then back on, but you have already done that.
The other thing to try might be to change the typing style to "touch typing." It isn't a perfect solution, but it might give another clue if you do have to call Apple accessibility. Good luck! In the last week, I have had two very different and very strange problems on two phones. My work 8 plus and the SE. Ultimately, both were solved by resetting all settings after confirming with Apple Accessibility that nothing else worked. I won't bore you with the details, just know that if you reset all settings, you will not lose any data, but you will have to go and change back all the settings you have customized like on the rotor, keyboard settings, Siri, and on and on.
