We had a thread on the Wifi assist setting found under Settings, Cellular, and near the bottom of that screen. When this setting is on, cellular data can be used when one's wifi signal is weak. I had this setting turned off on my old iPhone from which I transferred my data and settings to my iPhone SE 2020 but after completing the setup and restore of everything, I noticed that Wifi assist was once again turned on. I think it's prudent to review your major settings after completing a new iPhone setup to ensure you ended up with the settings you want.
