I tried to launch zoom from an email and it took me to Door Dash which was the last app still in the app switcher. I closed that out and tried again and it did what it’s supposed to do; opened zoom! I think something with Safari and mail has gotten fouled up. I have found a youtube video starting when trying to open a word attachment. It is like instead of acting on the attachment, it is launching whatever was last used in Safari. Try a one finger triple tap on the attachment and see if you find an option that doesn't launch Zoom, or Safari.
