You might be able to do this with the screen recording feature, only thing is that you would hear Voiceover after you start the screen recording and as you navigate to your Podcast player and start the Podcast, once you are on the Play button you could mute speech with a 3-finger double tap, then double tap to start the Podcast and let it play. This will create a video file, you could afterwards convert it to MP3 using one of the many online converters and, if you wish, use a program like Goldwave to edit out the initial part where Voiceover is speaking. Now, having said all this, it would be a pretty complicated and time consuming way to record a Podcast which already exists online in some audio format, most likely MP3. Why not just download the Podcast to your computer?
