I am assuming you are talking about special gestures you set up to do a gesture that is hard for you to do. I set up my SE by putting the phone next to my old phone. The transfer was flawless and all settings and my changes transferred over perfectly. Not sure if you use your last iCloud backup, but I would think things would transfer fine. Definitely not sure about itunes, never used it.
