Shirley, I myself would use the eraise all option and that of course will mean you have to reset up your watch from scratch.
If you do this then you can reset the watch up and use an older backup from the earlier os versions. If you eraise and setup as a new device then you have to turn voiceover on once the watch has finishe it's setup and is ready to be used. If you setup using a backup of the older watch os then everything you had working in that version should be the same once the installation / backup reset is completed.
