Sadly, when an iOS update is installed all the features are there.
Many like the Back Tap are not on by default. But some things will just be 
there and you have to deal with them.
You should be able to put off the update quite a while though, by making sure 
that automatic updates are off under settings, general, software updates.
Unless you need to keep Wi-Fi on over night, you could turn off Wi-fi when you 
go to bed so it cannot do an update over night.
That will also prevent iCloud backups though if you have that on.

latest update should happen despite my turning it off in settings, and I'm 
suddenly faced with iOS 14, can I introduce new features a little at a time?
