Thanks for your help. As it turned out, there is
no way of not setting touch ID or a passcode
following the update to iOS 14.1. So, it was
an easy matter to initially set up a passcode.
Then, in the setting for Touch ID & Passcode
there is an option to turn off Passcode.

When it asks you to set up touch ID. I think you
can say "not now" or "set up later" or words to
that effect. You will be prompted twice I think
as Apple really wants you to have security but you can bypass it.
For the pass code, when you are on the screen
that asks you what kind of pass code you want, 4
digit, 6 digit, alphameric, there is an "other"
option. That option will bring up a screen that
has "no pass code" or "do not use" or something
like that. Tapping that will then let you carry
on and you will have no touch ID or pass code security on the phone.
Of course, you can always come back and set
these up later should you choose to add
security. Sorry to be so inprecise but it has
been quite some time since Ive gone through these steps at set-up time.
