Hi,

You can handle this one of two ways. One is to unpair your watch from your 
current phone and back up the phone before you pair wtih the new one. Then you 
pair the watch with the new phone and choose to restore from the most recent 
backup.

The other is if your watch is still paired with your current phone and you 
choose to use that phone to set up your new one, my understanding is that you 
are asked if you want to change which phone the watch is paired with. If you 
choose to do that, the watch should be paired with the new phone automatically. 
I have never used that method, but I would imagine it works. I know from 
personal experience that the first method works.
