Hi Ian, You couldn't downgrade your new computer even if you wanted to because all older operating systems are designed for Intel chips, not the new Apple ones. However, the Mac includes software called Migration Assistant that lets you restore from a Time Machine backup. I'm sure Migration Assistant is designed to import your data, such as email folders, and whatever settings are relevant, and to ignore system files from old operating systems. You may have some extra set-up to do, but I would imagine most of it will happen automatically.
