That is definitely the best way, but if you don't want to add speaking rate to the rotor, you can do it in settings, but you have to double tap and hold on the volume slider and then drag left or right, you can then set it to 63 or 67 or whatever, but it's a very finnicky process, you need a steady hand and the amount you have to drag your finger left or right is minute, this might be a case where a stylus could be useful.
