If there is only an email address, that means they are texting from their Email rather than from their phone number. Other than writing them and asking for their phone number, you are stuck with the email address.
You can add people to contacts from text messages, but I find it overly tedious and have never been able to write out the steps in a helpful format. You have to get to the info button which seems to take two or three tries for me. When it is a phone number text, I usually double tap on the number so it begins to call, then hang up, and add the contact from the recent calls in the phone app as that is very straight forward.
