If you are talking about recording a meeting you are attending with your iPhone, the only way to record what you are doing on the phone is the Screen Recording feature in the Control Center. Do not just activate the Screen Recording, or it will not use the microphone, flick up on it to More info and double tap then flick right to Microphone and turn it on, then start the recording. It will pick up everything including what VoiceOver says. I've not tried this during a Zoom meeting, but Zoom has its own way of recording if you are the host, or if the host allows for it.
