I agree with Richard that this is really accessible. So, which one you get depends on what you need it for. The reason we use the multiple probes is because we use it in the grill and one is an ambient temperature probe and the other three we use if we are cooking different thicknesses of meats or one large piece like a loin that might be cooking faster on one end. The mini referrs to it having one meat probe. You can get packages with multiple probes, but I never cook more than one thing that is helped by having a meat thermometer in it.
