I cannot find the setting that used to be there to set where calls go by default. One option was Bluetooth headphones, or in reality, Bluetooth speakers, headphones, etc. The only other option would be after the call starts, to open the control center and see if you can select your speakers from the media destination. Or maybe just open Bluetooth settings and select the speaker.
Or, like you already said, it could be a Bose issue. I'd contact bose if the other things do not work.
