I would start with Settings, general, Language and Region. You can set it to Spanish US, or likely Spanish in other countries. Then, no doubt you will want to set a VoiceOver language that is Spanish as well. He may also want to set the Siri language to Spanish if available. You may also want to call Apple Accessibility to make sure.
