There is no setting to get the Reminders app to automatically open to the Today folder. The only way of accomplishing this is to leave the Reminders app in the app switcher. While in the app switcher, it will remain in the last folder you were in.
As far as the folders that you do not use, like scheduled or all. There is a way of making them disappear. On the main screen of the list of your folders, just hit the edit button. You will then have a list of all of the folders that you can have in your reminder folder list. Just double tap the ones you do not want to unselect them and turn them off. When done, just make sure to double tap the done button. Sorry, but do not quite understand your question about the 2020 reminders versus the 2021. Maybe I could help with more info. Hope this helps.
