Maybe I've never seen anything about direct touch since I usually just
type in text edit boxes. Direct touch seems like it wouldn't be good

Direct touch can indeed be added or removed from the rotor.
On my iPhone 12 pro, running iOS 14.4.2, direct touch is the last item in
the rotor category. I am able to toggle it on or off as desired.

If you are on iOS 14.4 it should not be a problem.
You should be able to just go ahead and type even though it says “direct
touch area.”
If it won’t let you type, turn the rotor and it will be there and you flick
up to turn it on and you should be good to go.
