There are a couple work arounds.  Some say you can hold down the control key, 
push on the track pad, and the context menu comes up an you can do it this way. 
 The way I have gotten it to work is.
1. Vo shift m, go to option, go to remove from dock, but don’t press it. 
2. Command tab away from it, command back, it will say finder but no worries it 
is still on the remove from dock option. Hit enter, and you should hear, the 
sound that it has been removed from dock. HTH
