It should be a setting you change in Settigs under Podcasts. Or maybe it is in
the Settings Tab in the Podcast App. It's there that you choose options to
download, be notified, only see most recent episode, see oldest to newest, etc.

I can’t seem to navigate episode lists. Even when I use the see all button I
only see the most recent posting. Am I missing a step or is this a new
VoiceOver bug? I am using iOS 14.5 on an 8 Plus.
