As long as I am somewhere where having the call on speakerphone doesn't bother anybody it is not difficult to just take the phone away from your ear which causes the call to go to speakerphone (as long as you haven't disabled this feature). Then just swipe up from the bottom just like you would when you want to go from any app back to the home page, you can then open the Messages app or Contacts or any other app and do whatever you want to do while you are talking to the other person on speakerphone. I have never had anybody ask me what I am doing which means the microphone does not seem to pick up Voiceover, but if you find it distracting to have both the caller and Voiceover on speaker you can of course use a headset except then you have both the caller and Voiceover on the headset which to me is no different than having both on the external speaker.

Hi, Carolyn. You can do this, but it is tricky. I usually use a headset as has been suggested. I also try to adjust the volume of voice over so there's a way to hear both the speech and the caller. Sometimes it helps to use a male voice if speaking to a female and vice versa. You should be able to do all of the things you listed while on a phone call. I've gotten texts before, and depending on the volume, the Voice over usually drowns out the person's speaking. Like I said, it does take some practice.
